Freezer-to-Grill Cajun Chicken Marinade

Looking for a way to make dinner magic with minimal effort? This freezer-to-grill Cajun chicken is bold, tangy, and infused with flavor thanks to its citrus-spice marinade. Just freeze it raw, let it thaw overnight in the fridge, and toss it on the grill. That’s it. The marinade works its magic while you do literally anything else.

When I prepped this freezer Cajun chicken, I used bone-in thighs and removed the bones myself. If you do the same, here’s a little kitchen witch bonus: save those bones! I gave mine a quick roast (salt, pepper, 30 minutes at 400°F) and popped them in the pressure cooker with herbs, garlic, and veggies scraps to make a rich, flavorful chicken stock.

It’s a great way to stretch your ingredients, reduce waste, and add another layer of homemade magic to your freezer stash. The result is a deeply savory broth perfect for soups, rice, or sipping straight from a mug.

Bold and flavorful, this Cajun chicken marinade is made to be frozen. The chicken soaks up every bit of smoky, tangy flavor as it thaws — making it perfect for summer grilling, meal prep, or weeknight dinners.

Ingredients
  

  • 1/4 cup vegetable oil
  • 1/4 cup soy sauce
  • 1 tsp lemon zest, freshly grated
  • juice from freshly zested lemon
  • 1/4 cup fresh parsley
  • 4 tbsp Worcestershire sauce
  • 4 tbsp red wine vinegar
  • 1 tbsp dry mustard
  • 1/2 tbsp smoked paprika
  • 3 cloves garlic, minced
  • 1/2 tsp ground red pepper
  • 3 lbs chicken breasts or thighs

Instructions
 

Freezer Assembly

  • In a 1-gallon freezer bag add all ingredients.
  • Seal the bag and give it a good squish to blend everything together.
  • On the outside of the bag, write the name of the recipe and the date. Place in the freezer.

Cooking Instructions

  • Remove the chicken from the freezer and place in refrigerator to defrost.
  • Grill until chicken is cooked through.
